Zucchini Bread Pancakes

I love breakfast foods.

And since I have the same Breakfast Protein Shake for breakfast everyday, I tend to eat breakfast foods at lunch or dinner, instead, aka Brunch and Brinner.

However, sometimes it's really hard to get in my vegetable food group with a brunch or brinner-type meal, so when I discovered Julie's Zucchini Bread Pancakes, I couldn't wait to try them!


I, of course, had to substitute ingredients in order to comply with the foods that work best with my body. So, my version is below.

Zucchini Bread Pancakes
Makes approx 15 pancakes
Ingredients
1 cup + 3/4 cup flour blend*
1/2 tsp sea salt
4 tsp corn-free baking powder
1.5 tsp stevia extract, powdered
1 tsp cinnamon
1/4 tsp nutmeg
1.5 cups Trader Joe's unsweetened vanilla almond milk
2 eggs
2 c zucchini, grind in food processor
1 tsp vanilla extract
2 Tbsp soy-free Earth Balance + 1 Tbsp butter, melted

In a large mixing bowl, combine dry ingredients. In another bowl, whisk together the wet ingredients, including the zucchini. Pour wet ingredients into dry ingredients and whisk. Batter will be lumpy from the zucchini.

Spray a griddle with cooking spray and set to medium-high heat. Drop 1/4 cup of batter onto the griddle; cook until bubbles start to form, then flip.


*I used a mixture of whole wheat flour, white flour, almond meal, millet flour and amaranth flour.
Note: You can play around with these ingredients. For example, you can use any flour or flours, your baking powder doesn't have to be corn-free, you can use sugar instead of stevia (but then you'll probably want to double amount), you can use regular milk or any kind of non-dairy milk, and you can use all butter or all Earth Balance)



For a complete meal, serve with nuts and/or nut butter. I made mine with almond butter & walnuts. And since I'm trying to avoid sugar as much as possible, I used coconut butter instead of syrup.

 

Since having DD, I've been having a really hard time feeling full after my meals. But, after 3 of these pancakes, I was almost too full! Must be all that zucchini!

Lastly, my 4-yr-old DD is the pickiest eater I've ever met. She helped me make these, so when she started inquiring about what zucchini was, I thought she wouldn't touch these pancakes. However, she topped hers with peanut butter & a little drizzle of honey and she ate FOUR pancakes!!! Guess that's one way to get her to eat her vegetables.


In addition to my DD, I also converted my friend, Stefany, who doesn't "really like breakfast foods." :)
